Who knew that a small pack of sundried tomato, mozzarella balls and pesto could provide a quick easy pasta meal that had so much flavour !
The chicken is optional- leftovers from a roast. This recipe has awesome flavours with or without it. But do add oyster mushrooms if you want some chewy meaty flavours without the chicken.
The pungent rocket provides a perfect note alongside the sweetness of mozzarella. And it all comes together in the time it takes to boil the pastaÂ
Ingredients
Pasta for 2 (I used fusilata but use spiral if you want)
3tbsp olive oil
1 small onion (chopped)
1 or 2 cloves of garlic (finely chopped)
1cup sliced mushrooms, 2 if you dont use chicken (chestnut or oyster)
1cup roughly shredded chicken
220g shop bought sundried tomato, mozarella, pesto mix (I used waitrose)
2tbsp creme fraiche
1/2 packet of rocket
a small handful pine nuts, (toasted)
parmesan to grate on top

Set the water to boil and cook pasta to instructions
