Avocado with roasted red pepper sauce and feta - just say that out loud and you will feel the taste in your mouth!
Sweet roasted red peppers whizzed up with garlic, chilli and tomato, salty feta crumbled onto it and chunks of ripe avocado mopping up that flavour. All atop a crispy toasted sourdough slice. This is breakfast heaven
Options:Add a poached egg on top.
Add slices of grilled halloumi instead of feta.
Make it vegan by substituting for vegan feta.
Some grilled sardines or prawns will turn this into a lovely lunch or a light supper.
The sauce keeps in the fridge so I can use it up to create new meals with it! Try it spooned over roasted cauliflower or potatoes much as you would a chermoula.
And last but not the least, whizz it up with feta and use it as a dip - its soo moreish with crisp bread or tortilla chips.

First make the red pepper sauce. Put all the ingredients for the sauce into a food processor and whizz together. You can roast your own peppers, peel the skin and then make the sauce....but all the hard work has been done, ready in a jar! So don't feel guilty, focus on your creation instead!
Taste and adjust to your liking. Remember you will be adding feta which is salty. Alternativley you can omit feta and add grilled halloumi.
The sauce will keep in the fridge for a week and you will have more than you need for a couple of toasts. Use it for one of the other options mentioned above.
Put the chunks of avocado in a bowl. Crumble and scatter the feta across the avocado. Spoon over 3/4 tablespoons of the sauce and mix so that the avocado is all coated.
Pile it onto your toast (butter it for extra deliciousness!)
Squeeze some lime over it and enjoy!!
Add a poached egg on to it for a bigger appetite.
