Heat the oven to 180c. Line a 6 inch tin with paper.
Mix the dry ingredients together in a bowl.
In a separate bowl, beat the eggs oil and sugar, till smooth.
Stir in the kefir/yoghurt, vanilla and lemon

Fold in the dry ingredients. Finally fold in the courgette and pistachios (reserve a few pistachios to scatter on the top of the mix)
Put the mix into the tin. Add the reserved pistachios on top. Bake for 50 mins until skewer is clean.
Take out from the oven, let it cool.
Decorate and dust with icing sugar and a few more toasted pistachios and slices of lemon
