These no guilt, low fat, tasty energy bars didn’t hang about - they were gone pretty quickly! They are moist, almost cake-like, with a little crunch from chia seeds to liven each mouthful. Quick to make and equally quick to disappear!
Ingredients
1 large apple cored and diced (no need to peel)
1 heapedtbsp coconut oil
2tbsp light muscavado sugar
150g fruit & nut granola ((I like coconut flakes in mine))
1tbsp chia seeds
1 small handful dried cranberries
2tbsp maple syrup or honey
1 beaten egg
METHOD

Heat the oven to 180c. Line a square 8inch tin with baking paper.
Put the apple & coconut oil in a pan and cook for 5/7 mins until soft. Cool slightly and use a fork to gently mash the apples. Add the sugar and mix.
Mix the rest of the ingredients in a bowl, except for the honey and egg. Add to the cooked apple and mix.
Add the honey and egg. Mix and spread out evenly into the baking tray.
Bake for 40 mins until browned. Remove from tray with the paper when cooled, score into bars and then peel the paper off.
It will keep in the fridge for a few days - but they didn’t really get the chance in our house!
