Description

This looks like a lot of effort but have a look at the YouTube video below and you will see that the sauce takes minutes to come together in the same pan. It couldn't be easier to plate up a this juicy, tender chicken dinner. And best of all - just 6 ingredients! 

Options: I've used large chicken thighs, bone in, here. But you can use chicken breasts too. 

Wrap the chicken breasts in pancetta for additional flavour.

  1. METHOD

    Prepare the chicken by making 2 or 3 cuts into the skin and meat. Rub olive oil, salt, pepper and mixed herbs all over and set aside for 15 mins. Use the time to prepare the sides for it. Broccoli or asparagus with a helping of potatoes will go well. 

    We ate it with parmesan crusted squash (see recipe on my website) and a herb and vegetable rice, which was equally delicious. 

    If using breasts, season and wrap with pancetta slices 

     

  1. Next heat a little olive oil in a pan and brown both sides of the chicken - about 5 to 6 mins each side. Cover and cook on medium heat for a further 6/7 mins until the chicken juices are clear. Breast meat will cook faster. 

    Remove cover, add the wine, mix it in with the chicken juices. Add the cream cheese and working quickly on low heat, bring the sauce together, whisking it. 

    Its ready to plate. Using a pair of tongs, lift the chicken from the pan on to the centre of your plate. Spoon over the sauce. Add garnish - some chive stalks add drama! 

    Serve immediately. Watch your family get impressed!
