Description

This is such a quick and delicious way to use up Christmas leftovers to feed the whole family. I actually preferred this simple tasty dish to the big fancy Christmas dinner with all the trimmings. 

It has such a creamy filling, lifted by all the fresh herbs - the tarragon in particular works so well with this recipe. And as there is no pastry bottom - guess what - you don't need to worry about a soggy bottom! What could be easier?

Options: you can keep this dish vegetarian by using up all the vegetables you have instead of the meat. 

Add a fish pie mix instead of the meat and top with mash potato or sliced leftover roast potatoes and you have yourself a lovely fish pie. You can of course just use the pastry instead. 

Top tip: This was such a hit so I will be making it again, very soon. You see I have chopped up the remaining turkey and ham, divided them into portions and put them in the freezer to use later!

  1. Melt the butter and oil in a wide, deep pan on medium heat. 

    Add the onions first and soften them. Add the leeks and soften them, stirring to make sure they don't burn. 

     

  2. Add the mushrooms and make sure they are softened.

    Add the garlic and herbs and mix well. 

    Scatter the flour over the leek mix and cook it briefly. Slowly add the warm milk stirring it and thickening the mix. Stir in the cream.

  3. Add the chopped turkey and ham mix or any other leftover cooked meat. You can also keep it veggie, by using up leftover sprouts or other veg. 

    Stir the mix well. Let it cool 

    Transfer to large oven proof serving dish, even out the mixture. 

    Un-roll the puff pastry (follow instructions on packet) Carefully lay it out on top of the dish, pinching and tucking in the sides so it does not separate and lift off the dish. 

    Decorate with a pattern. Bake for 25/30 mins till pastry is golden. 

    Serve immediately with a side order of dressed green beans. (see my miso salmon recipe for the dressing)
