Here, the ripe sweetness of the melon is deepened not only by the soft salty melt in your mouth prosciutto but also the sharpness of the rocket. All brought together with a little rapeseed oil and black pepper.
This is such a classic summer starter. Enjoy it as an easy starter when entertaining friends. It looks stunning when presented well, takes minutes to prepare, especially if you have prepared the melon ahead and stored in the fridge. 
But it can make a great lunch too - just increase the portion. Why share it when you can have it all to yourself?!🧡💚

  1. Cut and peel the melon,slice it into 1 inch thick slices and then halve them. you can store in an airtight container in the fridge for a day.
    When you are ready to serve, dress the rocket separately in a bowl, use your fingers and rub in the oil and ground pepper.
    Arrange in a wide platter with the melon and prosciutto making sure each serving gets 2 slices of prosciutto 5/6 chunks of melon and a handful of rocket.
