SEAFOOD PASTA – A PERFECT MIDWEEK MEAL

A one pan meal - in less than 30 minutes? And delicious? Now you are talking! 

Serve this one pan meal straight from the stove to the table - the buttery sauce with garlic, onions, a dash of vermintino wine, some sweet cherry tomatoes, chilli flakes - you will have a very satisfied family table. Plus hardly any washing up to do!

So if you are looking to prepare a quick meal with a wow factor, healthy and delicious, then look no further. This seafood pasta dish will become a firm favourite on your weekly menu. 

Options: you can add little bits of broccoli to this or peas to add some green veg. 

I have used uncooked prawns and cooked mussels here, because I don't like the squid rings they add to the prepacked selection. But you can buy a packet of cooked seafood mix and use that. Just omit the step to  cover and cook it.

  1. Prep your ingredients.

    Set the pasta to boil according to instructions. 

    Heat the oil and butter in a wide pan. 

    Add the onions and soften them till translucent. (2/3 mins)

    Add the garlic and sautee for 30 secs. 

    Add the cherry tomatoes, wine, salt and pepper and chilli flakes.Cover for a couple of minutes till the tomato skins are split. 

    Add the seafood mix and lemon juice. Cover for a minute till prawns are turning pink. They will continue to cook so you don't want them all done at this stage. 

    Drain the spaghetti, reserve a little water from the pan.

    Add spaghetti to the seafood in the pan and mix thoroughly, coating all the spaghetti with the buttery sauce. Add a few tablespoons of the pasta water to loosen it up. 

    Garnish with lots of chopped parsley and more chilli flakes or black pepper. 

    Serve immediately. It couldn't be easier. Buon appetito!
