BRUSSEL SPROUTS WITH BACON & CHESTNUTS

Description

Not everyone is a fan of brussel sprouts - but these are delicious - salty bacon and sweet chestnuts provide a perfect combination with these soft, crispy edged brussel sprouts. The trick is to not let the bacon and chestnuts go hard. And for this you have to prepare the elements separately then bring them together . Guaranteed perfection every time!

  1. Boil the sprouts until just tender. Drain and when cool, halve them, then set aside. 

    In a pan, heat the butter and olive oil. Add the shallots and soften them, add the garlic, lardons and bacon pieces, and fry until cooked but not crisp. 

    Add the chestnuts and mix well. 

    In an oven proof serving dish, Mix the brussels and the bacon mix together. Spread it out, dot with a little butter and set aside till you are ready to serve.

    On a busy christmas day, this prep is really helpful and one less thing to do. 

  2. Wehn you are ready to serve, pop the dish in the oven (while the turkey is resting!) and roast for around 15/18 mins until everything is sizzling. Add a few more dots of butter and serve immediately!
