CARROT & APPLE BAKE
Description
The sun is shining, the fridge is full and mister has fetched his lovely mum to stay the week with us. She always baked for us whenever we visited. Sadly, she’s not able to do very much these days. I’ve made this cake to welcome her.
I used some of the batter to make a few cupcakes as I couldn’t wait to taste it. The dark sugar gives it richness, the apple & raisins lend a moist sweetness and the walnuts are a perfect companion.
Serve with an cream cheese icing, vanilla ice cream or dust with icing sugar as I did - it’s perfect.

You will need a 9” cake tin, greased & dusted with flour
Heat your oven to 180c
It’s a 4 step assembly -
- Thoroughly mix all the dry ingredients (1-4) in one bowl and the fruit & nut mix (10-13) in a second bowl.
- In a third bowl whisk the oil, vanilla essence, sugar and eggs till you have a smooth mixture.
- Fold in the dry ingredients into the wet mixture, a third at a time.
- Finally fold in the fruit and nut mix a third at a time.
Pour mix into your cake tin half way up and bake for 40/45 mins until wooden skewer is clean. ( If you have extra mix, make muffins as I did which will only take 15 mins in the oven)
Serve with a dusting of icing sugar or a cream cheese icing. 💕
