FULL ON CHILLI CON CARNE
Description
If you want to throw a party and be able to both enjoy spending time with your guests and serve food which bowls them over, then a big hearty bowl of full on chilli con carne is just the ticket.
Its big flavours will have everyone singing your praises. The best part is you cook it the previous day and it just gets better as all the flavours melt into each other. You really cant go wrong with it.
I looked at loads of different recipes but in the end, I used my instincts and added my own personality. The coffee was a leap of faith, but it totally works!
Serving suggestions: I served this with colourful rice and a thinly sliced red onion and tomato salad. You could serve with a leafy salad too if you prefer.
The leftovers are wonderful too the next day, with jacket potatoes and a side salad of your choice!

Using a large, heavy bottom pan, heat the oil and sauté the onions, celery and carrots on medium heat till they soften - around 10 mins.Add the garlic, bay leaves, cinnamon stick & the ground meat. Brown everything, breaking down the meat.Next add the kidney beans and peppers and mix well.Add the tomatoes and the purée and break the tomatoes down.Add the sugar and then all the seasoning, stock, coffee and wine.Add the parsley and salt/pepper to your taste. It should be well seasoned, so taste and see what you want more of and add it.Mix everything well.Cover and simmer or 40/50 mins. It will turn a rich dark colour.I prefer to let it rest for a day - let it cool and then put it in the fridge overnight. It has a richer flavour when all the ingredients have melted into each other.But if you can’t do that then give it an hour at least. Garnish with sour cream and include a bowl of sour cream on the table on the side.Serve with plain rice, but make it more exciting by making a sweet corn, spring onion, tomato and red pepper mix, dress with olive oil red wine vinegar salt and pepper and throw it over the rice for a colourful presentation.Enjoy your party!
