Want a colourful dish to catch everyone’s eye at the table? These easy to prepare ahead peppers are a proper party piece. A great main for vegetarians or a flavoursome accompaniment to a meaty main, and in the unlikely event you have some left, a tasty bit of lunch for you the next day, with a little side salad. 

Options: Once you have roasted the peppers, you can experiment with fillings of your choice.

Substitute with vegan feta to keep it vegan.

Use other grains instead of cous cous.

My mum used to make a savoury potato mix with peas, coriander, garam masala and top it off with grilled cheese. So good! 

you can also use all sorts of leftovers to fill these peppers. Just use your imagination and don't be afraid to experiment!

METHOD

  1. The peppers: Slice peppers in half, cutting through the stem so each half has a stem to it. Clean out all the seeds.

    Brush the inside and out with olive oil, salt and pepper seasoning. 

    Roast in an oven at 200c for around 15 mins till slightly charred on the edges. You dont want it to lose its shape, so if your peppers are small, keep an eye on them and take them out in 10 mins. 

     

  1. Make the cous cous by adding the stock to it and letting it stand. Run a fork through it as it swells to stop it clumping. 

  1. Make the feta and herb mix : mix all the ingredients: feta, tomatoes, spring onion, red onion, and herbs. Add a tablespoon of olive oil, salt and pepper to season it well.  

  1. when the cous cous is cool, mix the herb and feta through it. 

    Stuff each pepper half generously. Put them in a pretty baking dish, you want to serve it in, to avoid transferring it and damaging them. 

    At this stage you can cover with foil and leave in the fridge if you are preparing ahead, for a day. 

    When you are ready to serve, take out to bring them to room temperature for 20 mins or so. Bake in oven for 15 to 20 mins, to  soften the feta and heat the dish through. Serve immediately, either as an accompaniment or as a main course with a hearty salad or vegetarian lasagne.
